In the vegan blog world, banana soft serve is a favorite among pretty much everyone. One of my favorite bloggers, Gena, claimed this recipe will change your life.
Banana soft serve is one of the simplest, healthiest desserts you can make for yourself. And its quite tasty too.
There is one ingredient. Any guesses?
Yes. A frozen banana.
There are so many uses for frozen bananas, I highly suggest stocking up on them. Once you make this recipe you will be glad you did.
Now when you are craving a bowl of ice-cream you can just make some yourself, and not feel bad about it.
One frozen banana will make a small sized single serving. I like to use one and a half. But if you are feeling extra hungry definitely go for 2-3!
If you haven’t heard me say this before, here it is again. I always keep a bunch of bananas in a zip lock freezer bag and store them in the freezer. Once they get overripe (more than a few freckles) I peel them, break them off into chunks, and store them. This way I always have some ready to go when I need one for a smoothie, or some banana soft-serve.
In this recipe I used about 1 and 3/4 of a frozen banana. I just placed the banana chunks into my mini food processor.
Process the bananas for about 1-2 minutes or until they become completely creamy. You may have to stop and stir them around a few times so that you make sure to get any remaining chunks processed. You can even add a splash or two of milk (I used two tiny splashes of So Delicious Unsweetened Coconut Milk)
Scoop your ice cream into a small bowl and there you have it. Banana soft serve.
If you want it to be a sundae – and keep it healthy you can easily make some raw chocolate “syrup” in about one minute.
All you need for chocolate syrup is 1 tbsp. raw cacao powder (or regular cocoa powder), 2 tbsp. agave nectar, and a tiny splash of vanilla extract. Mix together in a small bowl.
And then you have a delicious sundae that will make your non-vegan boyfriend say, “Wow what is that? Can I have a bite?” And after you give him a spoonful he’ll say, “Wow that is actually really good! What is in that?”
It’s not just really good. It’s fabulous. A healthy, completely raw, vegan, sundae. It does’t get much better than that.
You can even get creative and change up the flavors of your soft serve:
- For PB banana- just add a tbsp. or so (to taste) of your favorite nut butter
- for creamier consistency, you can add a splash or two of non-dairy milk. Coconut milk and almond milk are great choices.
- vanilla bean or vanilla extract for a vanilla soft serve
- cinnamon, nutmeg, or other sweet spices
- a 1/4 tsp. instant coffee powder for cafe soft serve
- cacao powder for chocolate soft serve
- coconut butter or extra virgin coconut oil for coconut soft serve
- this is also great topped with cacao nibs, chia seeds, sprinkles, or coconut whipped cream 🙂
